  • Kombu can be added to dried beans cooking in boiling water to decrease the cooking time, soften the beans, make them easier to digest, and thicken the bean broth. It is a vegetable that is rich in protein, calcium, iodine, magnesium, iron, and folate.
  • Adding a small piece of kombu to dried beans helps to tenderize them as they cook or adding to stock ingredients or soup or stews. This imparts a wonderful depth and umami flavour to your food and infuses additional nutrients and essential minerals and vitamins into your food.
